Colombo turns lunch into a contest between your appetite and the number of curry bowls on the table. Curry usually wins, but losing tastes excellent.

Start with hoppers, bowl-shaped pancakes made from fermented rice and coconut batter, often with an egg. Add string hoppers, dhal and pol sambol.

Then comes kottu roti. Metal blades chop flatbread, vegetables, egg and meat on a hot plate so loudly you hear dinner before you see it. Add rice and curry, seafood and isso wade at Galle Face.

In Colombo, lunch is sometimes heard first, smelled second and eaten third.

Day 1: a hopper is an edible bowl

An egg hopper is crisp at the edges, soft in the middle and apparently engineered to collect sauce. Simple food design, unusually competent.

Add dhal and pol sambol. If the waiter asks about spice, do not prove your personality to a chilli you have never met.

Day 2: rice and curries, plural matters

The meal is often rice plus several small curries: lentils, vegetables, fish or meat and sambol. Mixing is part of the point.

Morning

Choose small local cafés busy with office workers. Food turnover matters more than a designer logo.

Evening

Evenings suit kottu, seafood and Galle Face street food. The ocean breeze at least pretends the temperature is lower.

Day 3: kottu comes with a soundtrack

Kottu is chopped on a steel griddle with rhythmic metal blades. It is unofficially the evening soundtrack of Colombo, pending paperwork from the culture ministry.

At Galle Face try isso wade, lentil fritters topped with prawns. Eat them in the ocean wind or half the experience disappears.

What to skip

Food mistakes are predictable:

  • Choosing a place only for the rooftop view
  • Drinking untreated tap water
  • Questionable ice in low-turnover stalls
  • Ordering “extra spicy” as a sporting challenge

Food with its own volume setting

Colombo eats bright, spicy and varied. The best dishes often look simpler than the restaurant around them.

Mix local cafés, markets and street food while using ordinary caution with water and freshness.

If the kitchen suddenly seems quiet after kottu, your ears may simply still be ringing.
